STORY BEHIND THE CUP
This coffee came from a small farm, Finca La Benedicion in Chalatenango. It was produced by Ismael Recinos who has been growing and working in coffee for more than 15 years. He processed his coffees as washed and honey, paying meticulous attention to his processes. This lot was processed as honey, which was picked, depulped and dried on raised beds for 13-20 days.
This coffee is very sweet and slightly salty like salted caramel. It has a smooth mouthfeel. You'll taste banana fritter and prune. It's a perfect one for your morning or afternoon brew.
An additional story behind this coffee, Chalatenago is not a well known region for coffee production in El Salvador, but Piero Cristiani, a senior green-coffee buyer from Cafe Imports has spent years investing and developing relationships with the community of smallholder farmers there. While production has been impacted by coffee-leaf rust and weather, Ismael is able to produce 13 tonnes in 2020. He considers coffee to be a stable source of income for his family. He hopes to find partners who will buy his whole harvest, which will help him to improve the quality and grow his production. In fact, Finca La Benedicion took 2nd place in the 2015 El Salvador Cut of Excellence competition. This really illustrates the quality of his coffees.
