This coffee has a great structure and complexity. It has a red wine like acidity and sweetness; with a silky chocolate truffle texture and a hint of vanilla, it just melts in your mouth as soon as you have your first sip. Who doesn't like a chocolate truffle liquor!
STORY BEHIND THE CUP
Located in Southern Minas Gerais, in a micro-region known as "Campos das Vertentes", Santo Antonio farm was inherited in 1994, and Pinhal farm was acquired in 1997. At that time, it had only 100 coffee trees as dairying cattle was the main activity.
Pedro Gabbara, Joao Newton's son, is the 6th generation of coffee growers in his family. Coffee is more than a business; coffee is a passion for the family. The care for the environment is paramount at the farm and it is recognised by the certifications they carry. In 2019 they were awarded the most sustainable farm in Brazil.

Step 1 (0 minute)Start your timer before pre-wetting your ground coffee. Pre-wet (Bloom) with 25g of hot water and wait for 45 seconds.
Step 2 (45 seconds)Gently pour 100g of hot water in a circular motion. Let the coffee steep for 60 seconds.
Step 3 (1 minute 45 seconds)Pour to 225g at 1 minute 45 seconds, then swirl once the pour is done. Enjoy your brew!
