This coffee tastes like a fruit infused black tea. It's floral and fragrant with notes of apricot. You can taste a manuka honey like sweetness while it's warm, making it so delicious for both filter and espresso.
STORY BEHIND THE CUP
About 8 kilometers from the center of Yirgacheffe Town, this coffee is processed in a washing station called Aricha. Edido is the village, or kebele, where this coffee is grown and processed, in a microregion of Yirgacheffe. The coffee is picked ripe between November and January, depulped within 12 hours, and washed clean with spring water. The soils in this region are red-brown clay soil, about 1.5 meters deep.

Step 1 (0 minute)Start your timer before pre-wetting your ground coffee. Pre-wet (Bloom) with 25g of hot water and wait for 45 seconds.
Step 2 (45 seconds)Gently pour 100g of hot water in a circular motion. Let the coffee steep for 60 seconds.
Step 3 (1 minute 45 seconds)Pour to 225g at 1 minute 45 seconds, then swirl once the pour is done. Enjoy your brew!
