Flavour Profile: Nashi Pear, Hazelnut, Cola Candy
Came from a small farm in El Salvador owned by Alejandro Vasquez, this very special lot has only been produced in small amounts. Known for its enormous bean size, Pacamara has very high susceptibility to coffee-leaf rust. He has been lucky not to struggle much with coffee-leaf rust. His Pacamara production took half portion of the farm yearly production which is between 300-400kg. He does most of the work himself.
We are so privileged that we could get some of his coffees. It’s very sweet and comforting. You can expect to taste nashi pear, hazelnut and cola. Enjoy brewing!

Dose: 15g coffee | 225g Water at 90°C
Step 1 (0 minute)
Start your timer before pre-wetting your ground coffee. Pre-wet (Bloom) with 25g of hot water and wait for 45 seconds.
Step 2 (45 seconds)
Gently pour 100g of hot water in a circular motion. Let the coffee steep for 60 seconds.
Step 3 (1 minute 45 seconds)
Pour to 225g at 1 minute 45 seconds, then swirl once the pour is done.
