When brewed as a filter coffee, it offers a comforting body with a red apple-like acidity. STORY BEHIND THE CUP
In Cauca, coffee production practices focus heavily on collective land management and mutual support among growers. There are approximately 94,000 coffee-growing families, amounting to around 376,000 individuals. The farms in this region are predominantly smallholdings, averaging less than 3 hectares in size, with only about 0.8 hectares allocated to coffee cultivation.
Caucan coffee growers are renowned for their deep connection to the land, meticulous care in processing and production, and community-driven work. This results in coffee production that is almost artisanal, carried out by the grower, their family, friends, and other community members who collaborate to maintain traditions that significantly enhance the quality of the coffee. As a result, Caucan coffee has gained considerable recognition and respect in international markets.
BREW GUIDE
Dose: 15g coffee | 230g Water at 93°C
Step 1 (0 minute)
Start your timer before pre-wetting your ground coffee. Pre-wet (Bloom) with 25g of hot water and wait for 45 seconds.
Step 2 (45 seconds)
Gently pour 100g of hot water in a circular motion. Let the coffee steep for 60 seconds.
Step 3 (1 minute 45 seconds)
Pour to 225g at 1 minute 45 seconds, then swirl once the pour is done. Enjoy your brew!
