STORY BEHIND THE CUP
Ayla, a privately-owned washing station nestled in Ethiopia's Sidama zone, is part of the Testi Coffee family. Named after one of Mr. Faysel A. Yonis' nieces, Ayla sits at 1,950 meters above sea level and benefits from the pristine waters of the Bonora River. During harvest, 725 independent outgrowers, many farming organically on small plots, deliver freshly picked coffee cherries daily. Coffee is their primary cash crop, intermingled with food crops and shaded by native trees.
The high elevation and cool temperatures of the region result in slow-ripening cherries, denser beans, and a sweeter, more complex cup profile. Testi Coffee's commitment to traceability is evident in their practice of separating and processing each kebele's cherry delivery as a distinct lot. This particular coffee comes from the Bombe kebele.
BREW GUIDE
Dose: 16g coffee | 240g Water at 96°C
Step 1 (0 minute)
Start your timer before pre-wetting your ground coffee. Pre-wet (Bloom) with 25g of hot water and wait for 45 seconds.
Step 2 (45 seconds)
Gently pour 100g of hot water in a circular motion. Let the coffee steep for 60 seconds.
Step 3 (1 minute 45 seconds)
Pour to 225g at 1 minute 45 seconds, then swirl once the pour is done. Enjoy your brew!
