Both a seasoned barista and a master at roasting coffee, Al’s influence over the quality and flavour of every Vacation coffee cannot be understated.

Al is also a talented artist and graphic designer, and his sunny disposition epitomises the Vacation spirit. After living and working in the UK, Al now spends his time in Melbourne, enjoying the sunshine with his dog George.

 

Ti

Head Barista
Drink of choice: Single-origin espresso
 
Ti’s passion for coffee was born out of his love for photography. In his home country Vietnam, Ti spent time with coffee farmers and producers, photographing them and their produce, and listening to their stories. It was through this that Ti developed a lifelong respect for coffee in all of its forms, from soil to cup.

Ti’s dedication has led him to develop his skills a number of areas, experimenting and researching brewing techniques, as well as learning the intricacies of processing and roasting coffee. Ti describes coffee as a profound experience that can be enjoyed however we choose.

 

Joshua

Store Manager (Exhibition St)

Joshua is a veteran of the specialty coffee industry with over 10 years of experience. Raised in Brisbane and now based in Melbourne, Joshua is a true expert in his field.

Fascinated by technique and flavour, Joshua’s passion lies in understanding, iterating and perfecting his skills, whether that be brewing coffee, baking sourdough or making and aging his own cheeses.

 

Hitomi

Store Manager (Exhibition St and William St)

Former radio talk show host in Japan, Hitomi is an excellent barista and a dedicated member of the team at both our CBD and Cremorne cafes. Her love for coffee can be felt through her passionate service and great espresso, even extending to a talent for textiles.

Hitomi crafts impressive handmade bags, made from recycled hessian coffee sacks.

 

Nick

Team Leader
Drink of choice: V60 Pourover

Nick is a hospitality powerhouse with a wealth of experience, from bakeries to busy cafes. Our customers know him for his friendly sense of humour and his penchant for compliments. He is a true professional and is always hungry to learn.

When he isn’t developing cappuccinos, Nick is a talented software developer, specialising in virtual reality games.
