STORY BEHIND THE CUP
3 Pines Farm is a coffee farm located in the Mantiqueira de Minas region of Brazil. The farm, run by Leda Silva, covers 32 hectares, with 6 hectares planted with Red Catuai, Arara, and Acauã varieties at elevations of 1000 to 1350 meters. Leda, a third-generation coffee farmer, began her journey alongside her parents and later established 3 Pines Farm with her husband. Seeking to improve productivity and quality, Leda connected with AMECAFE Mantiqueira, an organization supporting women producers, and made significant improvements on her farm, focusing on sustainability.
At 3 Pines Farm, Leda’s family cultivates coffee with love, respect, and care. They manually harvest the coffee and use machinery for on-site processing. In 2023, the farm's dedication to quality was recognized when it won first place in the "Cafebras" competition.
BREW GUIDE
Dose: 16g coffee | 240g Water at 96°C
Step 1 (0 minute)
Start your timer before pre-wetting your ground coffee. Pre-wet (Bloom) with 25g of hot water and wait for 45 seconds.
Step 2 (45 seconds)
Gently pour 100g of hot water in a circular motion. Let the coffee steep for 60 seconds.
Step 3 (1 minute 45 seconds)
Pour to 225g at 1 minute 45 seconds, then swirl once the pour is done. Enjoy your brew!
