From the first sip, this coffee is incredibly sweet, vibrant, and expressive. You’ll find bright notes of pink grapefruit and juicy peach, balanced by the soft, creamy sweetness of vanilla bean. As a filter, the coffee is clean and refreshing, with delicate peach and grapefruit notes taking centre stage. Pulled as an espresso, it becomes fuller and more syrupy, bringing out deeper peach sweetness and a rich vanilla finish, with pink grapefruit adding a lively brightness.
STORY BEHIND THE CUP
This coffee is a testament to how meticulous precision processing can elevate both quality and flavour. Producer Adrian Lasso has become widely recognised for his innovative approach, most notably for his role in producing a coffee that won the World Barista Championship in 2024. While the lot we secured is not the same competition lot, it reflects the same dedication, detail, and craftsmanship that Adrian is celebrated for. This Pink Bourbon is a standout example of modern processing at its finest—every step intentionally designed to highlight the variety’s natural character and elevate the final cup experience.
BREW GUIDE
Pour Over
Brewing Equipment: Hario Switch
Dose: 20g (Ratio: 1:16)
Water: 320ml (93°C)
1. Pour in a circular motion for 15 seconds to allow the coffee to bloom.
2. At 30 seconds, add water up to 120ml with a gentle circular pour. Let sit for 15 seconds.
3. At 60 seconds, pour slowly in the centre until 1:30.
4. Release the valve, then slowly pour the remaining water until you reach 320ml total.
